Ingredients (Makes 10–12 Pooris)

  • 2 cups whole wheat flour
  • ½ cup fresh methi leaves, finely chopped (or 2 tbsp kasuri methi)
  • ½ tsp ajwain (carom seeds)
  • ½ tsp kalonji (nigella seeds)
  • ¼ tsp turmeric powder (optional)
  • ¼ tsp red chili powder (optional)
  • ¾ tsp salt (or to taste)
  • 1 tbsp oil (for dough)
  • Water as needed to knead
  • Oil for deep frying

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, combine flour, methi, ajwain, kalonji, turmeric, chili powder, and salt.

Step 3: Fry the Pooris

  1. Heat oil in a deep pan over medium heat.
  2. Check oil temperature by dropping a small piece of dough—it should sizzle and rise.
  3. Slide in one poori, gently press with a spoon to help it puff up.
  4. Flip and fry both sides until golden.
  5. Remove and drain on paper towels. Repeat with remaining pooris.

Serving Suggestions
